Ingredients

Salmon fillets:

  • 4 6 oz each

Honey:

  • 1/4 cup

Garlic:

  • 4 cloves minced

Soy sauce:

  • 2 tablespoons or tamari for gluten-free

Olive oil:

  • 2 tablespoons

Salt:

  • 1/2 teaspoon

Black pepper:

  • 1/4 teaspoon

Mixed vegetables (e.g., bell peppers, broccoli, carrots):

  • 4 cups chopped

Lemon:

  • 1 for garnish

Sesame seeds:

  • 1 tablespoon optional, for garnish

Instructions

Preheat the Oven:

  • Preheat your oven to 400°F (200°C).

Prepare the Marinade:

  • In a small bowl, whisk together honey, minced garlic, soy sauce, olive oil, salt, and black pepper until well combined.

Marinate the Salmon:

  • Place the salmon fillets in a shallow dish and pour half of the marinade over them. Let them marinate for about 10 minutes.

Prepare the Vegetables:

  • While the salmon is marinating, chop your mixed vegetables and spread them out on a baking sheet. Drizzle with olive oil, salt, and pepper, and toss to coat.

Bake the Vegetables:

  • Place the baking sheet in the preheated oven and roast the vegetables for 10 minutes.

Add the Salmon:

  • After 10 minutes, remove the baking sheet from the oven. Push the vegetables to the sides and place the marinated salmon fillets in the center. Drizzle the remaining marinade over the salmon.

Continue Baking:

  • Return the baking sheet to the oven and bake for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve:

  • Once done, remove from the oven and garnish with lemon wedges and sesame seeds if desired. Serve hot and enjoy your delicious meal!
