Ingredients

Bread:

  • 2 slices sourdough or any bread of choice

Avocado:

  • 1 large ripe avocado

Eggs:

  • 2 large eggs

Hot Sauce:

  • 1 –2 teaspoons adjust to taste

Salt:

  • To taste

Black Pepper:

  • To taste

Lemon Juice:

  • 1 teaspoon optional, for flavor

Olive Oil:

  • 1 teaspoon optional, for toasting bread

Instructions

Toast the Bread

  • Lightly brush the bread slices with olive oil (optional) and toast them until golden brown and crisp. Set aside.

Prepare the Avocado

  • Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork until creamy but slightly chunky. Add a pinch of salt, black pepper, and lemon juice (if using) for extra flavor.

Cook the Eggs

  • Heat a non-stick skillet over medium heat. Crack the eggs into the pan and cook until the whites are set but the yolks remain soft and runny (or to your preferred doneness).

Assemble the Toast

  • Spread the mashed avocado evenly over the toasted bread slices.

Top with Eggs

  • Carefully place one cooked egg on each slice of avocado toast.

Add Hot Sauce

  • Drizzle your favorite hot sauce over the eggs for a spicy kick. Adjust the amount based on your spice tolerance.

Serve and Enjoy

  • Garnish with additional salt, pepper, or optional toppings like sesame seeds, microgreens, or crumbled feta cheese. Serve immediately and enjoy!
